Rockpool Bar Takeover Featuring PS40

The flavors of the bar and grill meet the creative cocktails of the PS40 team in an exciting takeover.

On Monday June 20, the bar at Rockpool Bar & Grill will be manned by Michael Chiem, the clever mind behind CBD bar PS40. For one night only, Chiem will be prepping four cocktails at the diner, each incorporating an ingredient cooked over fire to complement the flavors found at Rockpool. The diner’s culinary director Corey Costelloe and head chef Santiago Aristizabal will create four special snacks to match the drinks.

A cocktail of Tanqueray London dry gin, poached pear, yuzu sake, cold-brewed T Totaler jasmine tea and Andrew Thomas verjuice will be paired with a scallop with macadamia cream and finger lime; While a drink made with Johnnie Walker Black, fresh bergamot, burnt honey and lemon will go with a Wagyu brisket empanada.

The ticket price includes four sample-size cocktails and four snacks.
